Juana Estrella, a Mexican immigrant, works in a taco stand next to the liquor store owned by her son and his American wife as some regulars chat. The taco stand accommodates mainly workers of Hispanic ethnicity who get off from the late shift at the nearby meatpacking plant. As immigrants settle down and are able to leave the plant behind, they start opening their own businesses, thereby altering the economic landscape. Beardstown, a town of 6,000, now counts four bars, two restaurants and two grocery stores owned by Mexican immigrants.
